A favorite every time we release it, we brew our Saison du Fermier recipe but allow it to age in Pinot Noir puncheons instead of our traditional Chardonnay barrels. This subtle difference creates an expression of our spelt Saison that is worthy of its own labeling. Blend #6 was aged in the puncheons for 10 months and then bottle conditioned for 3 months before being released to you.
