Summation Observation.
It’s been nearly 2 years in the making and today we are proud to announce our newest collaboration with our friends from @bottlelogicbrewing&mdashSummation Observation.
Back in August 2019, we brewed up a healthy batch of imperial stout with the @bottlelogicbrewing team here in Dania Beach. We then laid it to rest in @pritchardspirits Double Chocolate and 16 year old Dickel Bourbon Barrels. Fast forward 20 months and we emptied these wood aging vessels to be treated with copious amounts of coffee and vanilla beans.
Our vanilla bean selection for this beer was flown in from Papua New Guinea. You can expect the traditional creamy flavor (very similar to Madagascar beans). This Papua New Guinea varietal comes from the fruit of an orchid variety called ‘Vanilla Planifolia’ and are rich in the natural organic compound called vanillin.
For this version’s coffee, we sought out our @mostracoffee fam to source extra special beans and they surely did not disappoint. Acquired from the legend Anny Ruth and her farm “Loma La Gloria” in El Salvador. This coffee is “black honey” processed&mdashone of the myriad semi-washed ways to process coffee cherries on the spectrum between wet and dry.
The beans are barely processed so that basically only the skin of the coffee cherry is removed, leaving intact almost the entirety of the meat and mucilage and all that sugary goodness. They then spread the cherries in a semi-thin layer on a drying mat and cover them with a tent. These batch tents are carefully monitored to ensure controlled maceration and fermentation, and this is just one example of why Anny Ruth has been a rising star in the coffee world.
