Imperial Stout aged in bourbon barrels for 22 months with toasted & raw coconut, almonds, pecans, cacao nibs, coffee, & vanilla beans from Comoros & Indonesia.
Sometimes when sampling barrels, some possess such character that you know they can take a few punches. Recently, a particular group of Henry McKenna, Elijah Craig, and Stagg Jr barrels were showing off some particularly robust spirit character, so we decided to take the opportunity to do something a little outside the norm for us: to throw the book at ‘em. We started with a pound-per-gallon combo of raw and deeply toasted coconut, plus toasted pecans and almonds, three pounds each of vanilla beans from Comoros for some classic marshmallowy character, and from Sulawesi, Indonesia for a deeper chocolate and woody character to tie in with the bourbon flavors. Cacao nibs and a selected blend of Mostra Coffee help contribute to some darker, roasty complexity in the background. In the end the coconut and nuts are the stars up front, but not so much as to overpower the barrel character which makes itself known all the way through the finish.
