We started B2 of Proper Black and didn't change a thing from our homebrew days.
Batch 2 of Proper Black consists of an absolutely massive amount of fruit utilized in primary and secondary fermentation.
Blackberry, Black Raspberry and Black Currant were combined with a base honey and then step fed with meadowfoam blossom to enhance creamy vanilla marshmallow notes that help to balance the intensity of the dark fruit combination.
B2 rested on second use oak cubes trom Hydrodynamica for six months. We tossed in second use vanilla from a handful of smaller dark fruit projects, most specifically from our collaboration batches that typically see a pound of vanilla for a 10-15G project. The additional vanilla sweetness helps to pull the heavy tannin note from oak and fruit skins into balance.
Over the course of the past two weeks, we hit the liquid with bananas - a lot of bananas.
What we found out was that this massive base was so intensely berry forward, we were getting an enhanced creamy profile, without going too far into that candy banana runts note. We added more banana a second, and eventually a third time. While the berry base of Proper Black is there, the end results are magical and reminiscent of our precommercial Banana Creme Pie version of Proper Black - sans the Graham cracker.
The project is a really delicate blend of intense jammy berry with a massive creamy mouthfeel and a lingering banana berry blend of flavors. This one is rich, clocking at one of our thickest commercial offerings to date.
