Bourbon Barrel-Aged Maple SyrupEach year, we fill bourbon barrels from our favorite distilleries with maple syrup produced by our friends at Peck Family Farm in East Montpelier, Vt. The syrup is aged several months and then packaged in a resealable container; this year we will once again offer 750ml glass flip-top containers.

Fear and Trembling is a Baltic porter brewed with malt that was hand-smoked over a blend of native woods. Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. For this special selection of Edith, we conditioned the beer atop Alaka coffee from the Guji region of Ethiopia, sourced and roasted by The Coffee Collective in Copenhagen, Denmark.

Blend of 3 barrels of Lambic maturing in fresh emptied Vin Jaune barrels from Stephane Tissot. Two barrels were filled with wort and one with a two years old Lambic. We let it maturate for two years for the wort and one year for the Lambic. Beer bottled on 27th December 2016.Limited amount sold online 

Flora is the wine barrel-aged version of Florence (1915-1967), our grandfather’s sister as well as the name of our Farmstead® wheat ale. We selected a single barrel of Flora and aged it on fresh, Vermont-grown Montmorency cherries. The result is a complex, elegant expression of the annual harvest.
