Cellar Reserve 004 is a re-imagination of Key Lime Pie. This batch features maple blossom honey as the base, which adds notes of dark sugars. Aged in used beer barrels, flavors of caramelized sugars peek through at times. The largest change comes from a reduction in Lime Juice in favor of lime zest, reducing the citric acid in favor of citrus oils. The result is a brighter, sweeter lime presence throughout.
