La Ruche (Blend #4) 6% ABV X2
Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Northwestern Meadowfoam Honey with its notes of vanilla cupcakes, was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged for four months before being naturally conditioned in this bottle.
Pulling Nails (Blend #13) 6% ABV X2
The union of Saison du Fermier finished exclusively with Missouri Brettanomyces strains in Missouri Oak, a Blond Missouri Wild Ale finished in French Oak, and our solera-method Coexpressionalism base, which was then blended and naturally conditioned in this bottle for several months.
Tete de Cuvee (Vintage 2019) 7% ABV X2
Tête du Cuvée Vintage 2019 is the next in line to release to you after an extensive blending session and a long rest in bottles to pull everything together, achieving that subtlety that is Tête. Named after the "head of the blend" in a Champagne house, we pull together the best barrels and expressions of Saison we have aging in oak. For Oude Fermier Vintage 2019, we experimented with blending younger Saisons, using what we learned to pull together these budding, more vibrant and hopefully more "aging capable" threads for this blend of Tête. The result is a nostalgic hark back to the first ever blend of Tête de Cuvée. This beer is also the first we have packaged with our new bidule caps - caps used in Champagne production to help catch the lees during riddling but are also better at oxygen scavenging and more effective at creating an oxygen barrier when compared to standard beer crowns. They also create an awesome "POP", that sounds like a corked enclosure when you open them! Our intention is to blend a beautiful beer for the present, while embracing its aging potential.

Threads of the Saison du Fermier recipe which were aged for more than 1 year in oak, thus becoming Oude Fermier. The blend consisted of 4 brews of Oude Fermier aged in White Burgundy barrels, Neutral French Oak Puncheons, a Neutral Missouri Oak Foedre, a lightly toasted Missouri Oak Foedre, and 225 Liter California Chardonnay Barrels for 13 to 20 months.
