Mutuality XXV: Double barrel-aged stout blend first aged in Stagg Jr 8-year, Old Fitzgerald 19-year, and Henry McKenna 10year barrels for 20-27 months, then in Eagle Rare 10-year, Willett Family Reserve 10-year, and Calvados Apple Brandy barrels for an additional 9-16 months with Cook Island vanilla beans.
Mutuality XXV is once again a double-barrel aged stout, aged in several bourbon and one apple brandy barrel, and aged on Cook Island vanilla beans for the final stretch of the aging process. Apple brandy and vanilla come through in a big way on the nose, which switches to a bourbon-and-vanilla show on the palate. Big warming heat and mellow oak, deep dark chocolate, bright marshmallowy vanilla, and a lingering finish with the apple brandy making one last appearance alongside some delicate spice notes from the vanilla.
Two by Two: Two-barrel blend of Imperial Stout aged 26 months in an Old Fitzgerald 19-year barrel with Australian Vanilla Beans, and a Wild Turkey 15-year barrel with Brazilian Vanilla Beans.
We started working on our second 7th-anniversary weekend stout late last year, by selecting a handful of barrels from our stock, and added two pounds of a unique variety of hand-split and scraped vanilla to each one. After two months of aging, we picked our favorite two-barrel combination, and there ya go! We love these “just vanilla and barrel” stouts because the vanilla can be intense and decadent without getting in the way of the barrel character, as other adjuncts sometimes can.
These two well-aged bourbon barrels bring deep, woody complexity and smooth burn, while the Australian and Brazilian vanilla beans work in tandem to lend a rich creaminess with notes of caramel, mocha, dried fruit, and baking spices.
Singularity RB14: English Barleywine aged in a single Rare Breed 14-year barrel for 20 months.
Our Singularity series beers are those which, we feel, show off the best of our barrel-aging program. They are never planned, rather discovered as we taste through our barrels on hand. This particular Rare Breed (Basically a 14-year Wild Turkey barrel) jumped out at us in a big way during a recent tasting, so we rushed to get it into bottles in time for (most of) the holiday season.
We love how thoroughly the bourbon character shines through this beer. Drinking almost like a brown sugar old fashioned, it is heady with cherries, toffee, vanilla, and spice. Incredibly warming and spirit forward, but tempered by beautifully rich malt character with just enough sweetness to find balance.
