There’s so much that makes brewing with wet hops special. Sensorially, there’s simply nothing like it - anyone who has rubbed freshly picked hops knows that smell and can easily pick out their unmistakable imprint on a beer. Hops are roughly 75% water by weight and typically need to be kiln dried for transportation, storage and use throughout the year. If picked and used immediately, however, we can use hops in their freshest possible (“wet”) state. It’s like cooking with fresh herbs vs. dried - one is not inherently better, but they’re undeniably different. For us, the most exciting part is the fleeting nature of it all. We have about one month to brew these beers and a similar amount of time to enjoy them before we have to wait another year to do it all again. Thankfully, we have more than one beer in the works to celebrate this year’s harvest.

Back for its second year is Flowers, our Wet Hop IPA. It’s a beer inspired by our annual trips to the PNW and the outstanding examples of wet hop beers that dominate the season out there - except we rely on Northeast-grown hops for peak freshness. This year, on the hot side, we added 100 lbs of Vermont-grown Centennial hops from Champlain Valley Hops, New England’s largest hop farm. A 10-hour round-trip drive to Vermont was timed so those hops were added to the beer the moment they arrived at the brewery. The dry hop leans on a blend of varieties and pellet formats, but Simcoe is the clear centerpiece, and once again, Cryo Fresh (unkilned/frozen hops) from Yakima Chief further amplifies those harvest day aromatics.
