One can of Fox Farm Rays Bavarian-Style Weissbier - 7/3/24
Weissbier (aka Hefeweizen or Weizenbier) was an early love for many of us but it’s a deceivingly simple style that demands great attention to detail and technical precision. There’s a reason many of the great German examples are made by breweries that specialize in wheat beer almost exclusively. Weissbier leaves little room for error but when one hits the mark it’s an intensely flavor and uniquely refreshing joy. Utilizing a mash of 65% German wheat and 35% malted barley, we employ a mash regiment designed to coax added layers of spice (think clove). We're particularly excited about this batch of Rays as it's the first to be conditioned in the can with a final bit of fermentation naturally carbonating the beer. It's a traditional approach to Weissbier that carries a number of benefits - chief among them is that it affords us the ability to achieve a higher level of carbonation that perfectly suits style. It's a subtle improvement for the beer but those tiny nudges forward add up in a big way and we’re thrilled with this batch of Rays.
Pro Tip: When pouring from the can, pour about three-quarters of the beer into a glass (with vigor!), swirl the remainder and top off the glass.
