In honor of our 10th anniversary in 2020, we selected specific barrels&mdashBourbon barrels and a single tawny Port barrel&mdashup to two years in rest, to then condition atop Ecuadorian Costa Esmeraldas Cacao Nibs sourced by Dandelion Chocolate in San Francisco and Planadas Coffee from Tolima, Colombia, sourced and roasted by our age-old friends at The Coffee Collective in Copenhagen, Denmark.
Twilight of the Idols
Twilight of the Idols is our Winter Porter. We brew Twilight each Autumn, with a touch of coffee, and age it on a blend of select vanilla beans. Originally conceived with a friend in 2009 while brewing in Denmark, the name of the annual release is inspired by the title of the last text written by one of our philosophical idols, Fredrich Nietzsche.
Viola Sophia
This imperial stout was originally brewed by Ryan Witter-Merithew in 2011 at Fanø Bryghus, Denmark for Rome's legendary Ma Che Siete Venuti A Fà to celebrate the birth of the owner’s daughter. This reenvisioning of the original recipe benefits from the experience and learning inherent in a decade of growth. This version is more rich and velvety than it was nine years ago&mdashone might taste the inspiration of Damon and the early structure of Danish-derived recipes. As with all of our bottles, this 10% abv imperial stout is bottle conditioned. May it coincide pleasantly with the onset of this pandemic winter season…
Fear & Trembling
Fear and Trembling was Hill Farmstead’s first collaboration&mdasha Baltic-style porter brewed with malt that was hand smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This batch was brewed with malt that was hand-smoked over a blend of native woods, then fermented in the traditional way, with lager yeast, and conditioned in stainless steel. As a student of philosophy and former resident of Copenhagen, it seemed fitting to name our first collaboration after Denmark’s great thinker: Søren Kierkegaard. Anders, Shaun and Søren&mdashall three contemplated absurdity, faith and salvation while wandering the shores of the Baltic Sea... “...continue to work out your salvation with fear and trembling...”
