Two-barrel blend of Imperial Stout aged 26 months in an Old Fitzgerald 19-year barrel with Australian Vanilla Beans, and a Wild Turkey 15-year barrel with Brazilian Vanilla Beans.
We started working on our second 7th-anniversary weekend stout late last year, by selecting a handful of barrels from our stock, and added two pounds of a unique variety of hand-split and scraped vanilla to each one. After two months of aging, we picked our favorite two-barrel combination, and there ya go! We love these “just vanilla and barrel” stouts because the vanilla can be intense and decadent without getting in the way of the barrel character, as other adjuncts sometimes can.
These two well-aged bourbon barrels bring deep, woody complexity and smooth burn, while the Australian and Brazilian vanilla beans work in tandem to lend a rich creaminess with notes of caramel, mocha, dried fruit, and baking spices.
