This beer spent its first two years in a Weller 8-year barrel, developing flavors of toffee, vanilla, deep caramel, and smooth wheated bourbon character - nearly all the traits we look for in a barrel-aged barleywine. Although it was already showing great promise, we wanted more. So we moved it into an older barrel; this time an Elijah Craig 23-year, to add a layer of aged character. After an additional 13 months, deep rich tannin, old-growth oakiness, impressive spirit presence, and a distinctive caramelized banana character had developed. But we wanted more. So we tripled down, and again moved into a fresh bourbon barrel, this time a Weller 7-year, coming full circle back to wheated bourbon. After a final 14 months, we found ourselves wanting for nothing in this beer, as the final layer of barrel character helped it arrive at a balance akin to a deliciously malty, spirit-forward cocktail. This extra-large beer is tempered with three layers of oaky tannin, four years of slow aging, and a bourbon presence which tops anything we’ve bottled to date.
