For Eunoia 21, we built a blend of imperial stouts aged an average of 21 months in a mix of Elijah Craig 12- and 20-year bourbon barrels. After a long rest, the beer was conditioned on our favorite Ghanaian cocoa nibs, with a touch of Madagascar vanilla and a whisper of sea salt.
The result is a liquid truffle—simple in concept, but layered and expressive. Notes of dark chocolate, espresso, and dehydrated stone fruit lead the way, while subtle salinity lifts the cocoa and reins in the richness. We're proud of how these thoughtfully chosen ingredients come together in such a focused, balanced beer.
