This barrel-aged barleywine rested for 34 months in a blend of Heaven Hill and Elijah Craig 20-Year bourbon barrels. When we began pulling samples, the depth was undeniable, along with a beautiful natural thread of vanilla from the oak.
Rather than overpower it, we added a thoughtful dose of Tahitian vanilla to lift what was already there — accentuating, not masking — and letting the base beer remain the focus. Fig, dark caramel, winter baking spice, and warm vanilla.
