Notes from SP; “ Double Barrel Derivation has come in many different forms. From explorations in unique wine barrels, to being finished in exotic woods, to integrations with our favorite adjuncts. Double Willett Single Vanilla Derivation was brewed in February of 2021. Our O.W.K. recipe aged in Willett 5-year Bourbon Barrels until July of 2022 and then it was racked to Willett 4 year Bourbon Barrels for its final rest. At maturity, we racked the selected barrels to a bright tank where a blend of Vanilla Beans from Sri Lanka, Vanuatu, Madagascar, and Mexico were waiting to infuse a complimentary amount of vanilla to our double barrel expression. ”
