Pips X
X is a 15% Blueberry mead that was aged in Barbados rum barrels. Spending over a year in the barrel, there was a tremendous influence from the spirit and oak on this one. While there is a strong blueberry sweetness upon opening, and sweeter rum profile in the mid-palate, this one finishes with more of a perceived dryness from the kick of spirit and oak tannins. Slightly funky banana esters, along with tropical notes of pineapple linger in the tail and mingle with an oily lacquer profile.
