A project of this magnitude may have taken its time, but we’ll keep things brief and let the beer do the talking. This particular imperial stout was first aged in a single Weller 7-year bourbon barrel for 20 months, then moved into a Buffalo Trace 4-year barrel for 11 months, and finally into an Elijah Craig 23-year bourbon barrel for 15 more months.
In our final barrel tastings, we believed the resulting blend embodied everything we cherish in a well-aged, exceptionally spirit-forward stout—one worthy of being presented without the addition of any adjuncts.
Fortuitously, the de-barreling of this beer was timed such that it coincides with our brewery’s 500th unique beer release to date.
