“This beer was created using organic 2021 harvest 'Van' cherries from Collins Family Orchards in Selah, Washington. These sweet cherries were destemmed and refermented with a blend of barrel fermented and aged spelt and wheat saison.
This beer is an attempt to showcase the character of the fruit grown by the Collins family. Refermented to condition in the bottle with raw Washington Star Thistle honey.”
