Private Press Maple in the Wood - Blend #1 ∼2016: Side Project x Private Press collab. "Brandy and Bourbon Barrel Aged Maple Wheatwine". High ABV wheatwine aged in spirit barrels with maple. Blend #1 = early/rare. This is the crown jewel of the set.
Rosé du Pays - Blend #1 ∼2015-2016: "Delicate Missouri Table Saison blended with mature Bière du Pays and Chambourcin grapes from Noboleis Vineyards in Augusta AVA. Oak aged, bottle conditioned." 6.4% ABV. Rosé saison. Blend #1 at 10+ years = peak maturity, grape tannins + saison funk fully integrated.
Provence Hibiscus - Blend #1 ∼2016: "Provence series inspired by Belgian/French saisons. This 3rd release infused with organic single origin Hibiscus from Big Heart Tea Co." Oak aged Missouri saison with tea. Blend #1 = first release of this variant.
Bière Blanche - Blend #2 ∼2016-2017: "Inspired by Belgian witbiers. Brewed with wheat, coriander, orange peel. Aged in Chardonnay barrels with local microflora." Wine barrel aged witbier. Core Side Project lineup.
à la Table - Blend #1 ∼2015: "Inspired by classic saisons meant to be shared 'at the Table'. Low alcohol, refreshing. Fermented with wild Missouri yeast/bacteria, aged in Missouri oak." Flagship table saison. Blend #1 is early/rare. 11 years age = maximum complexity.
Bière du Pays - Blend #8 ∼2017: "Inspired by classic Saisons. Airy malt bill, fermented with wild Missouri yeast/bacteria + house saison blend. Aged in Missouri oak." Core farmhouse ale. Blend #8, 9 years aged.
Tasting notes after 9-11 years: All bottles have moved past bright acidity into sherry/port-like oxidation, integrated oak, mellowed funk, and deep Brett complexity. Maple Wheatwine has bourbon/maple depth. Rosé du Pays has jammy dried grape + leather. Provence Hibiscus has dried floral + earth. Table saisons are elegant with minerality and dried citrus.
