(Double IPA, 8.4%, 16oz) For this exploration into the art and science of hoppy beers, we return to Curiosity 71. We experimented with stressing our yeast in new and untried ways to coax intriguing fruity esters from its fermentation. The result, paired with massive doses of hand-selected Amarillo and Citra hops, is a hugely aromatic beer with a soft and creamy profile. Bursting above the foam are notes of juicy white peaches, tropical zest, a hint of yellow raspberry, and sweet overripe pineapple.--
