Hill Farmstead stouts

Damon Vanilla - 175  This iteration is double barreled , first aged for 2 years in Buffalo Trace barrels fallowed by another 2 years in Elijah Craig 18-year barrels and fallowed by time on whole vanilla beans.  The result is a meaningful tribute to a beloved companion and a deeply layered expression of our imperial stout, shaped by time and spirit, with resonant notes of dark chocolate, oak, and gentle warmth. 

Aaron 2025 - 90 This iteration rested for over two years in Bourbon barrels from our favorite distillery, then rested again for more than a year in the bottle prior to release.

Beyond Good & Evil rum barreled - 150  Imperial Stout brewed with Maple Syrup and Whear and aged in Rum Barrels.  This edition qas brewed in March of 2023 with malted wheat and Vermont Maple Syrup then aged for more than 2 years in freshly emptied Rum Barrels from Privateer Rum in Ipswich Mass. 

Beyond Good & Evil - 90 Brewed in January of 2023, we crafted our Bourbon barrel-aged maple imperial stout with malted wheat and local Vermont maple syrup. Following a two-year rest in hand-selected Bourbon barrels from our favorite distilleries and considered conditioning in the bottle, this offers a subtle, balanced sweetness with hints of maple, cocoa, and vanilla.

The Order of Things 04 - 95 This tryptic assembly—our fourth of the sequence— is composed of Genealogy of Morals that enjoyed 18 months in Bourbon barrels and was then divided into a Saxon’s River Distillery Sapling Honey Bourbon barrel and a Saxon’s River Distillery Sapling Maple Liqueur barrel for nine months each, and a single barrel of Damon rested first in Bourbon barrels for 34 months then secondarily in an Elijah Craig 18-Year barrel for an additional six months. The curated blend was then conditioned atop a blend of vanilla beans from Ecuador, Madagascar, Tahiti, and Papua New Guinea.

The Order of Things 06 - 100 It is composed of three elements: A portion of our cherished Imperial Stout, Damon, rested for 18 months in a Port barrel and then spent 16 additional months in a Whiskey barrel from WhistlePig Whiskey; our Viola Sofia Imperial Stout aged for 30 months in a Bourbon barrel; and one barrel of Aaron, our Barleywine-style ale, also aged for 30 months in a Bourbon barrel, then moved to a Whiskey barrel from WhistlePig Whiskey. The curated blend was then conditioned atop organic Madagascar vanilla beans.
