This beer is composed from two different brews from mid to late 2023 - one in which we leaned a little more than usual into aggressively boiled character, and the other in which we incorporated a portion of local blackberry blossom honey into the fermentation. The first round of aging took place in Weller 12-year and a Willet 5-year bourbon barrels, in which these beers spent about two years. At that time we deemed them worthy of advancing to a second round; a second iteration of barrel aging, this time in a Willet Family Estate 12-year and a Heaven Hill 18-year barrel. Nearly a year later, these two barrels met on the table during a tasting session and while each individually were quite compelling, we found the blend of the two to be even more so. Packaged with no adjuncts or additions, we hope you enjoy this iteration from our barrel program.
