Casey Foudre Cerise Avec Vanille

When I surprised Eric with the Foudre, I told him that he could pick and choose barrel cultures to add to it and really make it something of his own. He's been cherry picking (get it) our favorite barrels and adding those cultures to the foudre, along with his own custom yeast blend, to make something really unique to Casey. The base beer has oats, spelt, wheat and barley in it. We're still extracting the vanilla notes out of the wood, being that this foudre is made of fresh American oak. We treat this foudre in a sort of solera style, where we take out what we need and replace with fresh beer. We decided that the hand-picked, whole Danube and Balaton cherries from Hotchkiss, Colorado would go perfectly with the beer coming out of the foudre at the time. We added plenty of whole African vanilla beans to really make that oak pop.
