Eunoia Batch 3: 2025, One of the OG beers from our inaugural barrel-aged releases, this massive stout was aged for an average of 20 months in a blend of Heaven Hill Bourbon, Henry McKenna Bourbon, and Jeppson’s Bourbon barrels. After blending, we added marshmallow to balance the bourbon’s heat and spice, bringing forward notes of charred marshmallow and vanilla
Eunoia Batch 20: We took our robust imperial stout base and aged in a blend of Jeppson’s Bourbon and Willett Bourbon barrels for 22 months. Inspired by Dubai chocolate, we added Pistachio, Ghana cocoa nibs, vanilla, and roasted sesame. Notes of milk chocolate, creamy and nutty pistachio, rounded out with classic bourbon notes and oak tannin
Eunoia Batch 21: For Eunoia 21, we built a blend of imperial stouts aged an average of 21 months in a mix of Elijah Craig 12- and 20-year bourbon barrels. After a long rest, the beer was conditioned on our favorite Ghanaian cocoa nibs, with a touch of Madagascar vanilla and a whisper of sea salt.
The result is a liquid truffle—simple in concept, but layered and expressive. Notes of dark chocolate, espresso, and dehydrated stone fruit lead the way, while subtle salinity lifts the cocoa and reins in the richness. We're proud of how these thoughtfully chosen ingredients come together in such a focused, balanced beer.
Eunoia Batch 22: This barrel-aged stout was built from a blend of imperial stout recipes and rested for 24 months in a selection of bourbon barrels. The long time in oak developed deep layers of chocolate, dark caramel, and warm spirit character. After blending, the stout was conditioned on a combination of toasted and raw coconut flakes, hazelnuts, cocoa nibs, and Madagascar vanilla beans. The coconut brings both sweet and toasty dimension, hazelnut adds a soft praline richness, cocoa nibs reinforce structure and depth, and Madagascar vanilla rounds everything into a smooth, cohesive finish. The result is a focused, expressive stout shaped by two years in bourbon casks and carefully layered finishing ingredients.
