Description
Named after our 660 gallon “oval”, Cask 200 is a celebration of the unexpected and an experiment in variation. Each time we package a portion of its contents, fresh beer is added back to Cask 200 to mix and re-ferment with the aged beer still inside. While this solera-style saison will vary with each bottling, you can expect a delicate malt base supported by funky, yeast-derived flavors and a dry, acidic finish. Sante!

Hill Farmstead - Civil Disobedience 23
This iteration in our series of blended barrel-aged Farmstead® ales is a curation of beers brewed in November of 2014 and May 2015, consisting primarily of Arthur and Florence, aged in wine barrels that formerly held Le Sarrasin and Art, as well as a single thread of wine barrel aged Anna. After more than two years of extended bottle conditioning, this beer is now ready for release. Please open and consume between 44ºF and 50ºF.
