Imperial Stout brewed with coffee and aged in bourbon barrels. Single barrel variant, bottled 2016.
After aging 28 months in select bourbon barrels, we conditioned the beer atop Kenya Kieni coffee beans sourced and roasted by The Coffee Collective in Denmark.
Buena Vista Organic
We have chosen three barrels as the base for this single country origin coffee and cacao nib variation. After aging more than 26 months in select bourbon barrels, we conditioned the beer atop organic Buena Vista beans from Caranavi, Bolivia, sourced and roasted by our friends at The Coffee Collective in Copenhagen, Denmark, as well as organic Bolivian cacao nibs.
Edilfonso
As the foundation for our continuing series of single-origin coffee experiments, we chose a few barrels of our wheat imperial stout, Genealogy of Morals, that had rested in select bourbon barrels for more than two years. That beer was blended and then conditioned atop coffee beans grown and processed in the Huila region of Colombia by Edilfonso and Maribel Yara. The beans were sourced and roasted by The Coffee Collective in Copenhagen, Denmark. These age-old friends long ago elevated our worldview as to what coffee could be. After months of bottle conditioning, the beer is now ready to enjoy.

Hill Farmstead Flora Cherry - Unreleased 2018 Bottle
Flora is the wine barrel-aged version of Florence (1915-1967), our grandfather’s sister as well as the name of our Farmstead® wheat ale. We selected a single barrel of Flora and aged it on fresh, Vermont-grown Montmorency cherries. The result is a complex, elegant expression of the annual harvest.

Hill Farmstead Damon Dandelion 2020 Bottling
Damon (1993-2004) was our brother—devout and patient in an age of busyness and distraction. In his honor, we offer this version of his namesake imperial stout. We chose three barrels that had aged for nearly two years and conditioned them for a further atop cocoa nibs from Hacienda Azul in Costa Rica, sourced, roasted, and winnowed by the best bean to bar chocolate company we know: Dandelion Chocolate in San Francisco, Calif. Hill Farmstead Double Barrel Aged Fear and Trembling Bourbon / Wine Barrel 2016
Fear and Trembling is a Baltic porter brewed with malt that was hand-smoked over a blend of native woods.
