For 43 months this beer lay waiting in our brewery. Warm months, cool months, expansion and contraction, evaporation, and absorption. In that time, it saw three separate rounds of barrels — two rounds of long aged bourbon capped by a final 20 months in cognac.

Our barrel program continues to span angles in an ongoing conversation with the ever-expanding materials available. It should and will, but this is the visceral center of what’s possible when highlighting the fundamentals of this special process. In shining simplicity, integral moves leaning on farmed raw materials, informed brewing practice, stolen distiller’s effort, and days gone by capture something outrageous.

Some of you have seen Triple Barrels Wilderness of History before. This variant, the final drops, further bolds the headline by adding an additional 12-months residency in Cognac barrels.

A little time adjusting to room temperature before a big pour that has lighter carb slinking back almost immediately. A caramelized ruby molasses, dried fruit, toffee, truffle, oaky anvil of considerable distiller’s gas. Bull’s Eye.
