It begins with a foundation of buckwheat, spelt, and Vermont wildflower honey and is then fermented with our Farmstead® yeast. Transferred to wine barrels and left to its own becoming, the beer quietly matures—an homage to Edward’s great-uncle and his enduring legacy. Guided by the essence of both Le Sarrasin and Vera Mae, Samuel seeks to weave their defining elements into a singular entity.
After more than two years of slow, attentive bottle conditioning, we can share a new expression of this contemplative offering. As with so many of our Farmstead® ales, it will continue to evolve over time, rewarding patience with greater aromatic depth and textural nuance for years to come.
