Pruim Reine Claude
1, 2 and 3 year old lambic with 3 varieties of Reine Claude plums. The fresh, overripe, aromatic plums for this beer were harvested in Hageland (Belgium) and Northern France. Exquisitely the plums communicated their graceful yet complex harmony to us. So we blended the plum lambics with this fragility in mind and tried to translate the elegance and appearance of the fruit into the beer. Made with lambics that were aged on barrels that previously held müller thurgau wine, which gives a smooth vinous finish to the beer.
Steengaard
1, 2 & 3 year old lambic with apricots, white peaches, würzer grapes and white muscat grapes. Bottled January 2019.
Pjassel Moezel
1, 2 and 3 year old lambic with vineyard peaches harvested in 2019 and riesling and müller thurgau grapes harvested in 2018. Grape lambics made with extended maceration and post-maceration barrel aging. 2019 was another hot summer, so the vineyard peaches ripened wonderfully, but the acidity was on the low end. By blending in the grape lambic, the beer reached a brighter acidity and a richer bouquet. A symphony of fruits from a beautiful wine region that I love. Bottled February 2020.
