For those of you who are new to Freak Folk Bier
We started our fermentation project back in fall of 2018 with the goal to one day have a “real brewery”.
Lillian and I had been separately working our way through the industry- learning, growing- trying to find a path toward building our own projects/ businesses for nearly a decade each. Then, we met each other…
In 2018, we took a giant risk and pooled our (minimal) savings together and started purchasing small orders of used wine barrels and cheap, single wall Grundy tanks for blending. We pitched this idea to @queencitybrewery where Lillian was brewing at the time to see if it was feasible to rent space, brew and release our own product at their brewery. They were kind enough to let us try and we are forever humbled and thankful for that.
We love mixed culture/ wild beer and given our limited budget, brewing “wild” beer seemed like an obtainable goal. So, we went for it!
We spent the next three years releasing barrel aged, mixed culture bottles, having release parties with musical guests and fun draught beer, navigating the bleak environment of Covid, switching to an all distro business, etc…
Through all of this we gained many friendships and, to our surprise, a very loyal following of absolutely amazing people.
One of our good friends offered to help us execute our goal of opening our own brick and mortar shop where we could expand upon what we had built. Orion, you are an Angel, my friend!
In 2021, we spent 9-10 grueling months fighting with the town of Waterbury for them to allow our use of a commercial space in the downtown district. It felt like we were in the brink of giving up entirely. We overcame.
On February 25th of 2022, we finally opened the doors to our tiny, humble taproom and brewery where we continue to push ourselves and attempt to do what few others are doing in our great state and beyond.
… and today marks 4 YEARS since we opened our doors here in downtown Waterbury!
