In honor of our 10th anniversary in 2020, we selected specific barrels—Bourbon barrels and a single tawny Port barrel—up to two years in rest, to then condition atop Ecuadorian Costa Esmeraldas Cacao Nibs sourced by Dandelion Chocolate in San Francisco and Planadas Coffee from Tolima, Colombia, sourced and roasted by our age-old friends at The Coffee Collective in Copenhagen, Denmark.

Hill Farmstead Flora Cherry - Unreleased 2018 Bottle
Flora is the wine barrel-aged version of Florence (1915-1967), our grandfather’s sister as well as the name of our Farmstead® wheat ale. We selected a single barrel of Flora and aged it on fresh, Vermont-grown Montmorency cherries. The result is a complex, elegant expression of the annual harvest.

Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. For this special selection of Edith, we conditioned the beer atop Alaka coffee from the Guji region of Ethiopia, sourced and roasted by The Coffee Collective in Copenhagen, Denmark.

The name Vigneronne Cantillon was given in 1987. This name reminds us that, while it belongs to the beer patrimony, the spontaneous fermentation, the ageing in the barrels for several years and the addition of grapes make it a distant cousin of certain white wines.
